Denver: Union Pacific Railroad Company, 1945. 81/2x 11" Very good with folding creases. Authentic, two-page stapled, typed letter from T.M. Nelson (signed in pen) on official Union Pacific Railroad Company stationary, responding to a request from W.A. Jungk of Denver, Colorado (passenger) for the recipe and directions for entree - Sweetbreads, Hunter Style, served on Train 38 Pony Express. Jungk did not specify the exact date of his departure for Salt Lake City, as Nelsen wrote in the letter and said that he contacted ten chef-cooks who operate the LA to Denver line for the preparation of the dish. The preparation of and directions for this entree are outlined, including ingredients for the Sauce. A separate sheet of paper on DuPont stationary gives the recipe for Nut Bread (hand written) and on the back, Peach Marmalade. In pencil is the name Ethel Jaquith.
